7 New Board Members

Sacramento Child Advocates (SCA), Inc., is pleased to welcome Kasey Cotulla, Richie Fernandez, Jennifer Hartman King, Deborah Hoffman, Nora Makarczyk, Greg Secor and Dawn Suits to their Board of Directors. The group was confirmed at the June 8, 2009 Board meeting. SCA will greatly benefit from the diverse experience these professionals bring to the Board, in fields such as law, banking, architecture, auditing, printing, sales, technology media and television media.

This dynamic group has exhibited great willingness and enthusiasm to be productive board      members and is excited to represent an organization which strives to protect the foster children of Sacramento County. New Board member Deborah Hoffman, a reporter for News 10, offered poignant comments upon her confirmation to the Board of Directors: “It is truly an honor to be part of this wonderful organization. Thank you so much. I hope I can - in some small way - help make a difference in the lives of our community’s most vulnerable and precious youngsters”

The current economic crisis has made it very difficult for non-profit organizations to secure donors. But with the new and existing board members’ “outside of the box” thinking, fundraising over the next year looks very promising for SCA.

Personally, I would like to commend the leadership, staff and past and current board members of Sacramento Child Advocates Inc. for their passion to help make a better life for our foster children.


Seasonal Recipe: Chicken Bean Sprout Salad

Ingredients:

  • ½ pound fresh bean sprouts (I usually use the whole bag)
  • 1 tablespoon soy sauce
  • 2 teaspoons wine vinegar
  • 1 teaspoon peanut or corn oil
  • 1 teaspoon sesame seed oil
  • ½ teaspoon salt
  • ½ teaspoon sugar or even better a good honey
(I add sesame seeds, chopped green onion, garlic, slivered almonds to taste.  I also boil the chicken in a cube of chicken bouillon, to which I add onions, garlic and sometimes a bay leaf.)

Preparations:

Wash and clean bean sprouts by pouring boiling water over the sprouts to cook them slightly without actually boiling them.  Drain and cool. Boil or simmer the chicken breast in 2 cups of waster for 10 minutes.  Let cool.  Shred the chicken with your hands, discarding the skin and the bone.  (Here I sprinkle soy sauce and sesame seeds all over chicken strips to add flavor and add texture.) Mix the tablespoon of soy sauce, 2 teaspoons of vinegar, 1 teaspoon peanut oil or corn oil, 1 teaspoon sesame seed oil, ½ teaspoon sugar or honey in a bowl. Pour the sauce over the bean sprouts and mix thoroughly with chopsticks or fork.  Mix in the chicken shreds.

Tips:

This simple but tasty salad can be easily varied by using julienne strips of boiled ham, canned or boiled shrimp, turkey or even tofu.  I love to roll it up in a corn tortilla (warmed) or rice paper.
